New Hampshire Fall Vegetable Planting Guide
As the weather cools and the days shorten in New Hampshire, don’t let your garden go to sleep just yet! With a little planning, you can still harvest plenty of fresh produce before the first frost. Fall is the perfect time to grow hardy greens and root vegetables that thrive in cooler temperatures.
Starting around September 4, about five weeks before the first frost, sow seeds of arugula, lettuce, radishes, and spinach. These fast-growing crops will keep producing well into October, giving you fresh salads and crunchy snacks as the leaves begin to fall.
A week later, around September 11, plant another round of the same seeds—arugula, lettuce, radishes, and spinach—to extend your harvest. Staggering your planting times ensures a continuous supply of fresh veggies.
And don’t forget the garlic! Fall is the ideal time to get your garlic cloves in the ground. They’ll overwinter and be ready for harvesting next summer, rewarding you with robust, flavorful bulbs.
